  • 1 cup granulated sugar

  • 1 1/2 tsp fresh lemon juice
  • 1 Tbsp lemon zest
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup softened butter (for frosting)
  • 4 cups powdered sugar
  • Dash of salt (for frosting)
  • 1 Tbsp lemon zest (for frosting)
  • 2 Tbsp fresh lemon juice (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs, lemon juice, and lemon zest until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Scoop tablespoon-sized balls of dough onto prepared cookie sheets and flatten slightly with the bottom of a glass dipped in sugar.
  5. Bake for 9-10 minutes until barely golden brown on the edges. Allow cooling on the pan for a few minutes before transferring to wire racks.
  6. For frosting, beat softened butter with powdered sugar, salt, lemon zest, and lemon juice until smooth. Frost cooled cookies as desired.
