  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 large yellow onions sliced into 1/8-inch rings
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 4 garlic cloves minced
  • Pinch–1/4 tsp red pepper flakes
  • 1 tbsp Worcestershire sauce
  • 1 tbsp reduced sodium soy sauce
  • 5 1/2 cups water or beef broth
  • 1 12 oz can evaporated milk
  • 1/2 tbsp cornstarch
  • 2 tbsp beef bouillon
  • 1 tbsp fresh parsley minced (or 1 tsp dried)
  • 2 tsp fresh thyme minced (or 3/4 tsp dried)
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1 lb short cut pasta uncooked
  • 5 oz freshly shredded Gruyère
  • 1/4 cup freshly shredded Parmesan
  • Fresh parsley optional garnish

Instructions

  1. In a Dutch oven, melt butter with olive oil over medium heat. Add sliced onions, salt, and pepper; caramelize for 30–35 minutes until golden brown.
  2. Stir in minced garlic and red pepper flakes. Add Worcestershire sauce and soy sauce; cook for 30 seconds until fragrant.
  3. Pour in broth and half of the evaporated milk. Mix cornstarch with remaining milk and add to pot to thicken.
  4. Bring to a boil, then stir in beef bouillon and seasonings.
  5. Add uncooked pasta; simmer uncovered for 20–25 minutes until al dente.
  6. Remove from heat; mix in Gruyère cheese until melted.
