  • 200 g chicken breast
  • 2 cups basmati rice
  • 1 medium onion
  • 2 large tomatoes
  • 1 tbsp ginger garlic paste
  • 2 tbsp unsalted butter
  • turmeric
  • coriander powder
  • red chili powder
  • cumin seeds
  • garam masala
  • fresh mint leaves
  • cilantro

Instructions

  1. Marinate chicken with ginger garlic paste, turmeric, coriander powder, red chili powder, and salt for at least 30 minutes.
  2. Rinse basmati rice until clear. Boil water with salt, add rice, and cook until 70% done. Drain.
  3. In a pot, sauté onions in oil until golden brown. Add tomatoes and cook soft. Stir in ginger garlic paste and cashews before adding marinated chicken; simmer until cooked through.
  4. Layer half of the rice in a pot, followed by half of the chicken mixture. Repeat layers.
  5. Top with kasuri methi, yogurt, garam masala, and a splash of water if needed. Cover and cook on low heat for about 20 minutes.
