  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (thawed)
  • 1 cup graham cracker crumbs
  • 1 cup fresh or frozen blackberries
  • 2 tbsp granulated sugar (for the berry swirl)
  • 1 tsp lemon juice
  • 12 oz dark chocolate melting wafers

Instructions

  1. Prepare the blackberry swirl by cooking blackberries, sugar, and lemon juice in a saucepan over medium heat until thickened. Cool completely.
  2. In a mixing bowl, beat softened cream cheese and sugar until smooth. Mix in vanilla extract and whipped topping, then fold in half of the cooled blackberry compote.
  3. Roll tablespoon-sized portions of the cheesecake mixture into balls and place them on a parchment-lined baking sheet. Insert lollipop sticks and freeze for at least one hour.
  4. Melt dark chocolate wafers according to package instructions. Dip each frozen pop into melted chocolate until fully coated, then decorate with edible glitter or crushed graham crackers before chilling in the fridge until set.
