  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 2 egg yolks, room temperature
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup heavy cream
  • 2 tsp instant espresso powder
  • 4.5 oz white chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, cream together room temperature butter, granulated sugar, and brown sugar until fluffy.
  4. Add egg yolks, canned pumpkin, and vanilla extract; mix well.
  5. Gradually combine dry ingredients with wet mixture until just mixed.
  6. Scoop tablespoon-sized amounts onto lined baking sheets and bake for about 12 minutes until golden around the edges.
  7. For the cream topping, whip heavy cream, mascarpone cheese, espresso powder, vanilla extract, powdered sugar, and pumpkin pie spice until fluffy.
  8. Once cookies cool completely, top with the cream mixture.
