  • 1 large spaghetti squash (split in half, seeds removed)
  • 1 8-ounce block feta cheese
  • 1 cup cherry tomatoes (halved)
  • 4 tablespoons olive oil
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove seeds. Place cut side up on a lined baking sheet.
  3. Break the feta in half and place it in the center of each squash half. Scatter cherry tomatoes around, drizzle with olive oil, and top with minced garlic, salt, and pepper.
  4. Bake for 45-50 minutes until the feta is golden and the squash is tender.
  5. Use a fork to scrape out the spaghetti-like strands from the squash and mix everything together gently. Top with fresh basil before serving.
