  • 1 tablespoon neutral oil (grapeseed, vegetable, or sunflower)
  • 1/2 cup sour cream or Mexican crema
  • 2 tablespoons mayonnaise
  • 1/2 cup crumbled Cotija cheese or feta cheese
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon kosher salt
  • Lime wedges, for serving
  • Cilantro, for garnish

Instructions

  1. Preheat your grill to medium-high.
  2. Shuck the corn, keeping husks attached for easy handling.
  3. Rub each corn cob with oil and place on a baking sheet.
  4. In a bowl, mix sour cream (or crema), mayonnaise, cheese, chili powder, garlic powder, cumin, and salt.
