  • 1 ½2 cups uncooked orzo
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • ½ red onion, small diced
  • 6 oz. crumbled feta cheese
  • Juice and zest of 1 lemon
  • ½ cup extra virgin olive oil
  • 23 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled orzo with red bell pepper, cucumber, onion, garlic, parsley, basil, olive oil, lemon juice and zest, salt, and pepper.
  3. Gently fold in the crumbled feta cheese.
