  • 1/2 cup melted unsalted butter
  • 3 packages full-fat cream cheese (room temperature)
  • 1 1/2 cups powdered sugar
  • 1/4 cup key lime or lime juice
  • 12 tablespoons lime zest
  • 1 teaspoon vanilla
  • 3/4 cup heavy whipping cream

Instructions

  1. Prepare the crust by mixing graham crumbs and melted butter in a bowl. Press firmly into the bottom and up the sides of an 8" or 9" springform pan.
  2. In a large bowl, beat room temperature cream cheese until smooth. Gradually mix in powdered sugar, lime juice, lime zest, and vanilla until silky.
  3. Whip cold heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  4. Spread the filling into the prepared crust and refrigerate for at least 5-6 hours or overnight to set.
