  • ½ lime (juiced)
  • ½ tbsp olive oil
  • 1 tbsp coconut sugar (or brown sugar)
  • Freshly-ground black pepper
  • ¾ tsp chili powder
  • ⅛ tsp cayenne pepper (or just a pinch)
  • ½ tsp paprika
  • ¾ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ cup very finely diced green bell pepper
  • ½ cup tomato sauce
  • ¼ cup very finely diced yellow onion
  • 2 cloves garlic (minced)
  • ¾ cup uncooked jasmine (or basmati white rice)
  • ½ tsp cumin
  • Freshly-ground black pepper
  • ½ tsp coriander
  • ¼ tsp ground turmeric
  • ¼ cup finely diced cilantro
  • 1 ¼ cups water
  • ¼ tsp salt
  • 2 tsp of olive oil
  • Greek yogurt
  • Avocado (sliced)
  • Diced green onion or red onion
  • Cilantro
  • Lime wedges
  • Salsa or hot sauce

Instructions

  1. Preheat oven to 400°F.
  2. Season salmon filets with olive oil, lime juice, and homemade taco seasoning.
  3. Bake salmon for 15-20 minutes until flaky.
  4. Prepare sofrito rice by sautéing bell pepper, onion, garlic, and cilantro; then add tomato sauce and spices. Stir in jasmine rice and water; cover and simmer for 15-20 minutes.
  5. Assemble bowls with sofrito rice and salmon; top with avocado slices, yogurt, onions, lime wedges, and salsa.
