  • 1 tablespoon Toasted Sesame Oil
  • 2 tablespoons Lower-Sodium Tamari/Soy Sauce
  • 1 tablespoon Freshly Grated Ginger
  • 1 clove Garlic
  • 1 lb Cucumbers
  • 1 cup Shelled Edamame
  • 1 large Avocado
  • 0.5 cup Green Onion
  • 2 tablespoons Toasted Sesame Seeds
  • a pinch Red Pepper Flakes
  • 23 tablespoons Fresh Basil

Instructions

  1. Whisk together avocado oil, rice vinegar, sesame oil, tamari/soy sauce, ginger, and garlic in a bowl.
  2. Slice cucumbers into rounds or half moons and chop green onions and avocado.
  3. In a large mixing bowl, combine cucumbers, edamame, avocado, green onions, and optional herbs.
  4. Pour the dressing over the salad and toss gently until well-coated.
