  • 2 1/4 cups whole milk
  • 6 egg yolks
  • 1 cup + 2 tbsp granulated sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1/2 cup granulated sugar (for rolling)
  • 1/2 cup granulated sugar (for brulee topping)

Instructions

  1. Prepare the Cream Filling: In a saucepan, heat milk until steaming. In another bowl, whisk egg yolks, sugar, salt, and vanilla bean paste. Gradually mix in hot milk, then return to the saucepan and cook until thickened.
  2. Cool Down: Stir in butter until melted. Cover with plastic wrap directly on the surface and refrigerate until cool.
  3. Make Cookie Dough: Combine flour, baking powder, and salt in one bowl. In another bowl, cream butter and sugar until fluffy; mix in egg and vanilla paste. Gradually add dry ingredients until just combined.
  4. Assemble Cookies: Preheat oven to 350°F (175°C). Roll tablespoon-sized dough into balls, roll in sugar, place on sheets and indent each ball.
  5. Bake & Fill: Bake for about 9 minutes until edges are golden but centers are soft. Cool slightly before filling with chilled pastry cream.
  6. Finish with Crunch: Sprinkle sugar on top of each cookie and caramelize using a kitchen torch or broiler.
