  • 1 cup sifted cake flour
  • 1 1/2 cups sugar (divided)
  • 1 3/4 cups egg whites (room temperature)
  • 1 tablespoon warm water
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cream of tartar
  • 2 teaspoons pure vanilla extract
  • For frosting: 3 large egg whites
  • 1 1/4 cups sugar
  • 5 tablespoons water
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract
  • 3/4 cup sweetened flake coconut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse 1 cup of sugar for about 30 seconds. Sift together this sugar with sifted cake flour three times.
  3. In a mixing bowl, whisk egg whites with warm water until foamy; then add salt, cream of tartar, and vanilla. Gradually add remaining sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites in six additions.
  5. Pour batter into an ungreased tube pan and bake for about 35-40 minutes or until golden brown.
  6. Cool upside down for about an hour before frosting.
  7. For the frosting, combine egg whites, sugar, water, and cream of tartar in a heatproof bowl over simmering water; whisk until foamy then beat until glossy.
  8. Assemble by frosting layers generously and topping with coconut.
