  • 4 tablespoons unsalted butter (softened)
  • 1 pound sliced turkey (instead of corned beef)
  • 1/2 pound approximately 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup mayonnaise
  • 3 tablespoons ketchup
  • 1 tablespoon grated or finely chopped shallot
  • 1 tablespoon horseradish
  • 1 to 2 teaspoons hot sauce
  • 1/2 teaspoon sweet paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Russian dressing by mixing mayonnaise, ketchup, chopped shallots, horseradish, hot sauce, sweet paprika, salt, and pepper in a bowl.
  2. Spread softened butter on one side of each rye bread slice. On the unbuttered side, generously layer Russian dressing, followed by turkey, sauerkraut, and Swiss cheese.
  3. Heat a skillet over medium heat and place sandwiches butter-side down. Grill until golden brown and crispy (about 3 minutes per side).
  4. Remove from heat and slice in half. Serve warm with extra Russian dressing on the side for dipping.
