  • 3 pounds apples (Macoun, Honeycrisp, or Cortland)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 1/3 cup all-purpose flour
  • 9 inch double pie crust
  • 2 tablespoons unsalted butter (cut into cubes)
  • 1 tablespoon of milk (for egg wash)
  • 1 egg (for egg wash)
  • 1 tablespoon of turbinado sugar (optional)
  • vanilla ice cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4 inch pieces. Toss with sugars, vanilla, salt, and spices; let rest for 30 minutes.
  3. Roll out the bottom crust and fit it into a pie plate.
  4. Drain excess juice from the apple mixture into a saucepan; simmer with butter until slightly thickened.
  5. Toss apple slices with flour; fill pie crust with apples and pour syrup over them.
  6. Roll out top crust; seal edges and cut vents if desired.
  7. Brush with an egg wash and sprinkle turbinado sugar on top.
  8. Bake for about one hour until golden brown; cool for at least four hours before slicing.
