  • 4 boneless skinless chicken breasts
  • ½ cup olive oil
  • 2 tablespoons Dijon mustard
  • Juice of 1 lime
  • Juice of 1 lemon
  • Juice of 2 oranges
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fresh thyme (or dried)
  • 1 teaspoon fresh oregano (or dried)
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a bowl or jar, combine olive oil, Dijon mustard, lime juice, lemon juice, orange juice, salt, garlic powder, Italian seasoning, thyme, oregano, and crushed red pepper flakes. Whisk or shake well.
  2. Reserve ¼ cup of the marinade; pour the rest over the chicken in a zip-close bag or bowl. Ensure each piece is well coated. Marinate in the fridge for at least one hour.
  3. Preheat your grill to medium heat and oil the grates.
  4. Grill the chicken for about 5-7 minutes per side, brushing with reserved marinade after flipping. Cook until internal temperature reaches 165°F (75°C).
  5. Remove from grill and let rest briefly before serving.
