  • 2 tbsp unsalted butter
  • 2 cups diced apples
  • 1/4 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 cup melted unsalted brown butter
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction
  • 4 oz cream cheese
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 2 tbsp apple cider reduction (for frosting)
  • Apple slices (for garnish)
  • Cinnamon sticks (for garnish)

Instructions

  1. In a saucepan over medium heat, cook diced apples with light brown sugar and ground cinnamon until soft.
  2. Whisk together cake flour, baking powder, ground cinnamon, nutmeg, and salt in a bowl.
  3. Beat melted unsalted brown butter and sugars until fluffy; add eggs and vanilla.
  4. Gradually mix dry ingredients into wet ingredients alternating with apple cider. Fold in sautéed apples.
  5. Preheat oven to 350°F (175°C). Line cupcake tin and fill with batter. Bake for 18-20 minutes until toothpick comes out clean.
  6. For frosting, beat cream cheese with softened brown butter; gradually add powdered sugar and spices.
  7. Once cupcakes are cool, frost generously and garnish with apple slices and cinnamon sticks.
