  • 1/2 cup white sugar
  • 2 oz semi-sweet chocolate (melted)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 23 cups powdered sugar
  • 1/21 teaspoon peppermint extract
  • 12 tablespoons cream or milk
  • 1/4 cup crushed candy canes (about 34 candy canes)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, brown sugar, and white sugar until light and fluffy. Mix in melted chocolate and vanilla until well combined.
  2. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined. Fold in chocolate chips.
  3. Drop spoonfuls of dough onto parchment-lined baking sheets, leaving space between each cookie. Bake for about 10 minutes until edges are set but centers remain soft.
  4. While cookies cool, prepare the frosting by beating softened butter and powdered sugar until smooth. Add peppermint extract and cream to achieve the desired consistency.
  5. Once cookies have cooled completely, spread frosting between two cookies to make sandwiches.
