  • 1 pound skinless boneless chicken breasts or thighs
  • ¼ cup cornstarch
  • 3 tablespoons cooking oil
  • 2 tablespoons chopped garlic
  • 1 large onion, cubed
  • 1 cup cubed bell peppers
  • 2 tablespoons dark soy sauce
  • 4 tablespoons sweet chili sauce
  • 1 cup peeled and cubed ripe mangoes
  • 1 teaspoon ginger garlic paste
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 23 green chilies, chopped
  • 2 tablespoons red chili paste
  • 2 tablespoons tomato ketchup
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch
  • 1 cup water
  • Chopped spring onion greens for garnish

Instructions

  1. Cut chicken into bite-sized pieces and coat with cornstarch, salt, pepper, and ginger garlic paste.
  2. Heat oil in a skillet over medium-high heat and fry the chicken until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic, green chilies, onion, and bell peppers until softened.
  4. Combine soy sauce, sweet chili sauce, red chili paste, tomato ketchup, rice vinegar, salt, pepper, cornstarch mixed with water; pour over veggies.
  5. Return chicken to the skillet along with mango; cook briefly until heated through.
  6. Serve garnished with spring onions over rice or noodles.
