  • 2 small avocados (or 11.5 larger ones)
  • 2 heads little gem lettuce
  • 1 can chickpeas (drained)
  • 1/4 cup Greek yogurt
  • 2 tsp extra virgin olive oil
  • Juice of 1/2 lemon
  • 1 tsp smoked paprika
  • 1 tsp honey
  • 0.5 tsp garlic powder
  • 2 tsp capers (in brine)
  • 1/2 tsp Dijon mustard

Instructions

  1. Prepare the dressing by blending the Greek yogurt, olive oil, lemon juice, garlic, capers, and Dijon mustard until smooth.
