  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)

  • 5 cups chicken broth
  • 1 ½ lbs yukon gold potatoes (or red potatoes)
  • 1 cup half-and-half
  • 1 ½ cups shredded cheddar cheese

Instructions

  2. Add diced onions, carrots, and celery to the pot; sauté until tender.

  5. Gradually add chicken broth and half-and-half while mixing well.
  6. Incorporate cubed potatoes and return chicken to the pot; simmer until potatoes are tender.
