  • 1/2 cup bread crumbs
  • 1/2 cup freshly grated parmesan
  • 1 egg
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups water
  • 1 cup small pasta (such as orzo, stelline, or ditalini)
  • 2 cups spinach, roughly chopped
  • Parmesan for serving

Instructions

  1. Preheat oven to 350°F. In a bowl, mix ground chicken, onion powder, garlic powder, bread crumbs, salt, pepper, egg, and parmesan until well combined.
  2. Roll into tablespoon-sized meatballs and place on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown.
  3. In a large pot, heat olive oil over medium heat. Sauté diced onion, carrots, and celery for 3-4 minutes until softened.
  4. Add minced garlic and salt; cook for an additional minute.
  5. Pour in chicken broth and water; bring to a boil. Add pasta and cook according to package directions.
  6. Once cooked, gently add baked meatballs and chopped spinach; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning as needed before serving with extra parmesan on top.
