  • 1 cup pumpkin puree
  • 1/3 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup light brown sugar (or coconut sugar)
  • 1/4 cup maple syrup

  • 11/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • Optional: 1/2 cup powdered sugar for glaze, 2 tablespoons maple syrup for glaze, 1-2 teaspoons milk for glaze

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk melted butter, pumpkin puree, Greek yogurt, eggs, brown sugar, maple syrup, and vanilla until smooth.
  3. In another bowl, mix flour, baking soda, baking powder, salt, and spices.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Pour batter into a greased loaf pan and bake for 45 minutes or until a toothpick comes out clean.
  6. Cool slightly before drizzling with optional maple glaze made from powdered sugar mixed with maple syrup and milk.
