- 6 jalapeños (halved and seeds removed)
- 2 tablespoons olive oil
- 1 ¼ cups shredded cheddar cheese (divided)
- 8 oz cream cheese (⅓ less fat)
- ½ cup light sour cream
- ¼ cup low-fat milk
- 3 cups fresh cauliflower florets
- Preheat your oven to 375°F.
- Bake the chicken and jalapeños drizzled with olive oil on one sheet, and crispy bacon on another sheet for about 20–25 minutes until cooked through.
- In a mixing bowl, combine shredded cheddar cheese, cream cheese, sour cream, milk, smoked paprika, and cayenne pepper until smooth.
- Shred the cooked chicken and crumble the bacon; mix with the cheese mixture along with most of the chopped jalapeños.
- Spread cauliflower florets in a greased baking dish; pour over the chicken-cheese mixture and top with remaining cheese, jalapeños, and bacon.
- Bake for another 20 minutes until golden brown.
