  • 1 lb boneless skinless chicken breast (cut into 1-inch pieces)
  • 6 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1/2 large onion (diced)
  • 1 large bell pepper (diced)
  • 1 medium head cabbage (chopped or coarsely shredded; ~810 cups)
  • 2 medium carrots (shredded)
  • 1/4 cup coconut aminos
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 tsp toasted sesame oil

Instructions

  1. Season chicken with salt and pepper. Pat dry and sear in a tablespoon of olive oil over medium-high heat until golden brown. Remove from pan.
  2. In the same pan, sauté garlic and ginger in remaining olive oil until fragrant.
  3. Add onions and bell peppers; cook until softened.
  4. Mix honey with coconut aminos, then stir into the pan.
  5. Toss in cabbage and carrots; season with salt and pepper. Stir-fry until cabbage is tender but crisp.
  6. Return the chicken to the pan to heat through. Finish with toasted sesame oil, green onions, and sesame seeds before serving.
