  • 5 medium sweet potatoes
  • 2 heads broccoli
  • 1 cup buffalo sauce
  • 1/2 cup avocado oil or olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut chicken, sweet potatoes, and broccoli into small pieces.
  3. In a bowl, whisk together buffalo sauce, avocado oil, salt, pepper, and garlic powder.
  4. Coat sweet potatoes with half of the sauce mixture and spread in a greased casserole dish; roast for 30 minutes.
  5. Toss chicken and broccoli in the remaining sauce mixture.
  6. Layer chicken and broccoli over roasted sweet potatoes; bake for another 20-25 minutes until chicken is cooked through.
  7. Add cheese and green onions on top; bake for an additional 5 minutes until cheese melts.
