  • 23 pounds bone-in braised short ribs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup dry apple vinegar
  • 1 cup beef broth
  • 1 can (14.5 ounces) crushed tomatoes
  • 23 sprigs fresh thyme
  • 23 bay leaves
  • Salt and pepper, to taste
  • 1 pound pasta (pappardelle or your choice)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season short ribs with salt and pepper, then sear until browned on all sides. Remove from pot.
  2. In the same pot, sauté diced onion, carrots, and celery until softened (about 5-7 minutes). Add minced garlic and cook briefly.
  3. Deglaze with dry apple vinegar, scraping up browned bits; let reduce by half.
  4. Return short ribs to the pot; add beef broth, crushed tomatoes, thyme, bay leaves, and bring to a simmer.
  5. Cover and simmer for 2-3 hours until meat is tender; shred the meat and return it to the sauce.
  6. Cook pasta according to package instructions; reserve some pasta water.
  7. Toss cooked pasta with ragu in the pot; add reserved water as needed for desired consistency.
  8. Serve topped with grated Parmesan cheese and fresh basil if desired.
