  • 1 spaghetti squash (halved and seeds removed, about 23 pounds)
  • 4 tablespoons olive oil (divided)
  • Salt and pepper (to taste)
  • 1 ½ cups cherry tomatoes
  • 3 cloves garlic (minced)
  • 1 shallot (minced) or 2 tablespoons minced onion
  • 1 package (150g) Boursin cheese (Garlic and fine herbs or your favorite flavor)
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat your oven to 400ºF (204ºC).
  2. Brush the spaghetti squash halves with 1 tablespoon olive oil and season with salt and pepper. Place cut-side down on a baking sheet.
  3. Roast for about 30 minutes until tender when pierced with a fork.
  4. In a bowl, combine cherry tomatoes, garlic, shallot (or onion), remaining olive oil, salt, and pepper.
  5. Once the squash is roasted, divide the tomato mixture between the halves.
  6. Add half of the Boursin cheese into each half of the squash.
  7. Increase oven temperature to 425ºF (218ºC) and roast for an additional 20-25 minutes until tomatoes burst open.
  8. Mix melted cheese with tomatoes and shred the inside of the squash with a fork.
  9. Stir in fresh basil and serve immediately.
