  • 250g digestive or graham crackers
  • 75g butter
  • 300g fresh blueberries
  • 800g full-fat cream cheese
  • 260g granulated sugar
  • 200g sour cream
  • 4 large eggs
  • 2 tbsp lemon juice
  • 1 tbsp all-purpose flour
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Crush digestive or graham crackers and mix with melted butter. Press firmly into the bottom of a springform pan.
  3. Toss fresh blueberries with sugar, flour, and lemon juice; spread over the crust.
  4. Beat cream cheese until smooth, then gradually add sugars, sour cream, cornstarch, vanilla extract, and eggs. Mix until combined.
  5. Pour the cheesecake filling over the blueberry layer and bake for approximately 60 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
