  • 1/2 cup chopped broccoli
  • 1/2 ripe avocado
  • 1/4 cup blueberries
  • 24 TBSP dried cranberries
  • 24 TBSP roasted sunflower seeds
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1 clove garlic
  • 1/2 tsp lemon juice or white vinegar
  • 1 tsp poppy seeds
  • 1/2 tsp dried parsley
  • 1/2 tsp dried dill
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/81/4 tsp garlic powder (to taste)
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  1. Make the dressing by blending garlic with yogurt, buttermilk, mayonnaise, lemon juice, poppy seeds, parsley, dill, onion powder, paprika, garlic powder, salt, and pepper until smooth. Refrigerate for at least an hour.
  2. Wash and dry the spinach thoroughly. In a large bowl, combine spinach and chopped broccoli.
  3. Add blueberries, diced avocado, dried cranberries, and sunflower seeds to the greens.
  4. Pour chilled dressing over the salad; toss gently until everything is evenly coated.
  5. Serve immediately or let chill for 30 minutes to enhance flavors.
