Ingredients

Scale
  • 8 cups peeled apples (about 3.5 pounds)
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¾ cup granulated sugar (adjustable)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 ¼ cups all-purpose flour (for crust)
  • 1 cup cold unsalted butter (16 tablespoons)
  • 7 tablespoons ice-cold water

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the apples by washing, peeling, and slicing them into ¼-inch thick pieces. Combine with vanilla extract, sugars, flour, cinnamon, and salt in a bowl.
  3. For the crust, mix flour, sugar, and salt in a separate bowl. Cut in cold butter until crumbly, then add ice-cold water gradually until dough forms. Chill for at least 30 minutes.
  4. Roll out one disc of dough and fit it into your pie dish. Add the apple filling evenly.
  5. Roll out the second disc for the top crust, place it over the filling, seal edges, and cut slits for venting.
  6. Brush with milk and sprinkle with turbinado sugar if desired. Bake for 15 minutes at 425°F before lowering the temperature to 350°F (175°C) for an additional 45 minutes or until golden brown.
  7. Allow cooling before slicing.
