  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 medium red onion (chopped)
  • 5 cloves garlic (minced)
  • 1 jalapeno pepper (seeded and finely chopped)
  • 1 tablespoon dried basil
  • 1/4 teaspoon ground ginger
  • 1 can (14 oz) coconut milk
  • 1/2 cup cream
  • 1 tablespoon cornstarch
  • 34 cups hot cooked rice

Instructions

  1. Cut chicken into 1-inch pieces and place in a bowl.
  2. Combine curry powder, salt, pepper, and chili powder; season chicken. Cover and marinate for 1-2 hours.
  3. Heat olive oil in a large skillet; sauté onion, garlic, jalapeno, dried basil, and ginger until onion is translucent.
  4. Add marinated chicken; cook until no longer pink (5-6 minutes).
  5. In another bowl, whisk coconut milk, cream, and cornstarch; pour into skillet while stirring.
  6. Simmer until sauce thickens (5-10 minutes).
  7. Serve over hot cooked rice.
