  • 3 cups cold cooked jasmine rice
  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup frozen peas and diced carrots
  • 2 green onions, sliced
  • 1/3 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook the diced chicken until golden brown and fully cooked; set aside.
  2. In the same skillet, scramble the eggs until just set; remove from pan.
  3. Add another tablespoon of oil and sauté the peas and carrots until tender.
  4. Stir in the cold rice, breaking up clumps to crisp it slightly.
  5. Return chicken and scrambled eggs to the pan; mix well.
  6. In a bowl, whisk together all sauce ingredients and pour over the rice mixture. Stir until evenly coated.
  7. Garnish with sliced green onions before serving.
