  • 1/4 cup unsalted butter (chilled and cut up, for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or nonstick spray.
  2. Cream softened butter and granulated sugar in a large bowl until light and fluffy. Add the egg, buttermilk, and vanilla extract; mix until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients while stirring gently until just combined.
  4. Fold in diced strawberries until evenly distributed.
