  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Blackening seasoning (homemade or store-bought)
  • 1 tablespoon paprika (smoked or sweet)

  • ½ tablespoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon dried oregano
  • ½ teaspoon dried thyme

Instructions

  1. In a small bowl, mix together all blackening spices until well combined.
  2. Pat each cod fillet dry with paper towels to ensure a good sear. Rub both sides with olive oil.
