  • 6 cups chicken broth
  • 1/2 cup rice (or orzo pasta)
  • 3 large eggs
  • 1/3 cup fresh lemon juice
  • 1 carrot, finely chopped
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • Salt & pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion and carrot for about 5 minutes until softened.
  2. Pour in the chicken broth and bring to a gentle boil.
  3. Stir in the rice (or orzo) and cook according to package instructions until tender.
  4. Add shredded chicken into the pot and lower the heat to keep warm.
  5. In a separate bowl, whisk together the eggs and lemon juice until well combined.
  6. Temper the egg-lemon mixture by slowly adding hot broth while whisking continuously.
  7. Pour the tempered mixture back into the pot while stirring constantly; season with salt and pepper.
