  • 1 ½ cups crushed Oreo cookies
  • 5 tbsp melted butter
  • 2 (8 oz) packages softened cream cheese
  • 2 tbsp sour cream
  • 1 tbsp cornstarch
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup Andes mint baking chips

Instructions

  1. Preheat your oven to 325°F.
  2. Grease a 6-inch springform pan and wrap it in aluminum foil.
  3. Mix crushed Oreos with melted butter; press into the bottom of the pan and bake for 10 minutes.
  4. In a large bowl, beat softened cream cheese, sour cream, cornstarch, sugar, and vanilla until smooth. Add eggs gently until just combined.
  5. Fold in Andes mints and pour over the cooled crust.
  6. Bake in a water bath for about 60 minutes or until set.
  7. Cool in the oven with the door ajar for 30 minutes before chilling in the fridge for at least four hours.
