Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 large egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup chopped peanut butter cups

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients until combined. Chill dough for one hour.
  4. For the cheesecake filling, beat softened cream cheese with sugar, egg, and vanilla until smooth.
  5. Shape chilled dough into disks, place cheesecake filling in the center, fold edges over to seal, and roll into balls.
  6. Space cookie balls on the baking sheet and bake for 10-12 minutes until lightly golden around the edges. Cool before drizzling melted white chocolate on top.
