  • 1 (10-ounce) can Rotel (or a can of diced tomatoes)
  • 1 (7-ounce can) diced green chilies
  • 1 (14-ounce) can white beans (navy beans or cannellini, drained)
  • 1 (14-ounce) can pinto beans, drained
  • 2 & 1/2 cups shredded rotisserie chicken
  • 3 cups water
  • 1 tablespoon Better Than Bouillon Chicken Base
  • 1 (8-ounce) package cream cheese, softened
  • 1 & 1/2 cups frozen corn
  • Cheddar cheese, for serving
  • Sour cream, for serving
  • Cilantro, for serving
  • Limes, for serving
  • Avocado, for serving
  • Jalapeno, for serving
  • Green onion, for serving
  • Tortilla chips, for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and spices; cook until fragrant.
