  • 1 cup chopped onion
  • 1 bell pepper (chopped)
  • 2 medium carrots (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon salt
  • 15 ounces diced tomatoes
  • 10 ounces diced tomatoes with green chilies
  • 8 ounces elbow macaroni pasta
  • 15 ounces black beans (rinsed and drained)
  • 15 ounces red kidney beans (rinsed and drained)
  • 2 cups water
  • 2 cups shredded cheese (cheddar, Monterey jack, mozzarella)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, bell pepper, and carrots for about 6 minutes until softened.
  2. Add minced garlic, chili powder, cumin, and salt; cook for another 30 seconds to release the spices' aromas.
  3. Stir in diced tomatoes, elbow macaroni, black beans, kidney beans, and water. Mix well.
  4. Increase heat to medium-high until simmering. Cover and reduce heat to low; cook for about 12-15 minutes until pasta is tender and most liquid is absorbed.
  5. Remove from heat; stir in most of the cheese, reserving some for topping. Serve hot.
