  • 3 tablespoons vegan butter
  • 1/2 cup chopped pecans
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste
  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water in a bowl and letting it thicken for about 5-10 minutes.
  2. In a separate bowl, cream together room temperature vegan butter and sugars until fluffy. Add in the prepared flax egg, maple syrup, and vanilla bean paste; mix well.
  3. In another bowl, whisk flour, cinnamon, baking powder, and salt. Gradually add this to the wet mixture until just combined.
  4. Gently fold in chopped pecans.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C). Roll tablespoon-sized portions of dough into balls and coat them lightly in sugar before placing on a lined baking sheet.
  7. Bake for about 12-15 minutes until golden around the edges. Let cool before enjoying.
