  • 1 cup dark vanilla extract (alcohol-free)
  • 1 cup coconut vanilla extract (alcohol-free)
  • 1 1/2 cups all-purpose flour
  • 10 oz. sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut vanilla extract (alcohol-free) for at least an hour. Drain and reserve the liquid.
  2. Set up three bowls: one with flour, another with whisked eggs and coconut milk, and the last with coconut flakes.
  3. Coat each pineapple ring in flour, dip into the egg mixture, then roll in coconut flakes to adhere.
  4. Heat vegetable oil to 350°F (175°C) and fry each ring for about one minute per side until golden brown. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese and powdered sugar until smooth, adding reserved vanilla extract (alcohol-free) to taste.
