  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ½ cup cocoa powder
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • 4 large egg yolks
  • 2 cups heavy cream (divided)
  • 3.5 oz dark chocolate, finely chopped
  • 4.5 oz white chocolate, finely chopped
  • 5 oz milk chocolate, finely chopped

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix eggs, milk, sour cream, oil, and vanilla in another bowl until smooth. Combine wet and dry ingredients.
  4. Dissolve espresso powder in hot water and fold into the batter. Divide between prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  5. For the mousses, whisk egg yolks with sugar and cornstarch; heat cream and stir into yolk mixture until thickened. Pour over chopped dark and white chocolates separately to mix.
  6. Whip remaining cream to stiff peaks and fold into each chocolate mixture.
  7. Assemble by layering cake with dark mousse, then white mousse; chill between layers.
  8. For ganache, heat cream until steaming; pour over chopped milk chocolate and stir until smooth.
  9. Spread ganache on top of chilled cake; decorate as desired.
