  • 1 teaspoon fresh thyme, chopped (or ½ tsp dried)
  • 4 cups vegetable broth
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¼ cup fresh parsley, chopped
  • Additional olive oil for drizzling before serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until softened (5–7 minutes).
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add chickpeas, rosemary, thyme, salt, pepper, and red pepper flakes; stir well.
  4. Pour in vegetable broth and bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 25–30 minutes.
  6. Blend part of the soup for desired texture; stir in chopped parsley.
  7. Serve warm with a drizzle of olive oil.
