  • 1 large boneless turkey breast half (about 2 1/2 lbs)
  • 5 ounces whole wheat French bread (cut into small cubes)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 2 tablespoons dried cranberries (chopped)
  • 3/4 cups chicken broth
  • 2 cups turkey or chicken broth for gravy
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay the boneless turkey breast flat on a cutting board and sprinkle with kosher salt.
  3. In a skillet over medium heat, melt butter and sauté onions and celery until soft. Combine with bread cubes, herbs, seasonings, beaten egg, dried cranberries, and chicken broth in a bowl.
  4. Spread the stuffing evenly over the turkey breast and roll tightly. Secure with cooking twine.
  5. Place seam-side down in a baking dish, brush with softened butter, cover with foil, and bake for about an hour until the internal temperature reaches 165°F (74°C).
  6. For the gravy, whisk flour into warmed broth and simmer until thickened.
  7. Let the roulade rest before slicing and serve with gravy.
