  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree

  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined; press into the bottom of the pan and bake for 8–10 minutes.
  3. Beat cream cheese until smooth; add sugar and mix until fluffy.
  4. Fold in pumpkin puree, sour cream, vanilla extract, and pumpkin pie spice.
  5. Add eggs one at a time, mixing just until combined.
  6. Pour filling over the cooled crust and smooth the top.
  7. Optional: Place pan in a larger roasting pan filled with hot water for even baking.
  8. Bake for 60–70 minutes or until the center has a slight jiggle; cool gradually in the oven with the door cracked open for an hour.
  9. Refrigerate for at least six hours or overnight before serving.
