  • 2.53 lbs boneless beef chuck roast, cut into 2-inch cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 2 large carrots, peeled and finely chopped
  • 2 celery stalks, finely chopped
  • 46 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 cup dry red apple vinegar
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup beef broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: Pinch of red pepper flakes
  • Cooked pasta
  • Fresh Parmesan cheese
  • Fresh basil or parsley

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear half of the beef until browned on all sides. Remove from skillet.
  3. In the same skillet, sauté onions, carrots, and celery until softened. Add garlic and tomato paste; cook until fragrant.
  4. Deglaze the skillet with apple vinegar and let reduce by half.
  5. Transfer everything to a slow cooker: add seared beef, crushed tomatoes, diced tomatoes, broth, bay leaves, and herbs. Stir gently.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef is tender.
  7. Shred the beef using two forks and return to sauce; adjust seasonings before serving over pasta.
