  • 3 cups baby spinach
  • 5.3 ounces feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup roasted red peppers
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets skin-side down on the baking sheet; carefully slice pockets into each piece.
  3. Brush with olive oil and season with salt and pepper.
