  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the mini pumpkins, cut off the tops, and scoop out seeds and pulp.
  3. Sauté diced onion and minced garlic in olive oil until fragrant.
  4. Combine ground beef, pumpkin puree, sautéed onion and garlic, spices, and herbs in a mixing bowl.
  5. Grease a baking dish with olive oil; place pumpkins inside and fill with stuffing.
  6. Roast for 30-35 minutes until tender.
  7. Cool slightly before serving hot.
