  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup sweet corn kernels (grilled, if possible – frozen works too)
  • ¼ cup thinly sliced red onion
  • 1 cup sour cream (save half to drizzle on top)
  • 2 tbsp mayonnaise
  • ½ cup cotija cheese (crumbled, plus extra for garnish)
  • 1 tsp chili powder
  • Salt and pepper (to taste)
  • 1 lime (cut into wedges)
  • 3 cups cooked rice
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the chicken thighs in lime juice, avocado oil, chili powder, cumin powder, garlic powder, salt, and pepper for at least 30 minutes.
  2. Grill or sauté sweet corn until heated through.
  3. Cook marinated chicken in a grill pan over medium-high heat for 6-7 minutes per side until golden brown and cooked through.
  4. Assemble bowls starting with rice as the base. Top with grilled chicken, sweet corn, red onion slices, and a mixture of sour cream and mayonnaise.
  5. Add crumbled Cotija cheese and garnish with fresh cilantro and lime wedges.
